Lemon Yogurt Pound Cake

INGREDIENTS:

  • 1/2 tsp coconut oil to grease baking sheet
  • 1 1/2 cups sprouted whole grain flour
  • 2 tsp baking powder
  • 1/4 tsp fine salt
  • 3/4 cup coconut sugar
  • Finely grated zest of 1 lemon
  • 1/2 cup organic plain low fat (2%t) Greek yogurt
  • 1/4 cup low fat (1%) milk
  • 1/4 cup extra-virgin olive oil
  • 1/2 tsp pure vanilla extract
  • 2 large egg whites
  • 1 large egg

DIRECTIONS:

  1. Preheat the oven to 350° F.
  2. Coat an 8 1/2- by 4 1/2-inch loaf pan with coconut oil.
  3. Whisk together the flour, baking powder and salt in a medium bowl.
  4. Put the coconut sugar and lemon zest in another bowl and mix together. Add the yogurt, milk, olive oil, vanilla, egg whites and whole egg and vigorously whisk until well blended.
  5. Add the flour mixture into the egg mixture and blend together. Pour into pan.
  6. Bake 50 minutes. Let cool in pan. Enjoy!
