INGREDIENTS:
- 1 slice whole grain or sprouted toast
 - 1 egg
 - 2 Tbsp water
 - 3-4 Tbsp grated zucchini & carrot
 - ½ tsp curry powder
 - 1 tsp of grass fed butter
 - 3 handfuls halved cherry tomatoes
 
DIRECTIONS:
- Whisk the egg and water together.
 - Add veggies and curry powder and continue whisking.
 - Dip bread into the mixture.
 - Heat butter on low heat in a skillet.
 - Place dipped bread in the skillet for 4 to 5 minutes.
 - Flip over and cook for 2 to 3 minutes.
 - Remove from skillet. Top with cherry tomatoes
 - Serve with your preference of either hummus, mashed avocado, or Greek yogurt and enjoy!
