Spirulina Superfood Popsicles

INGREDIENTS:

  • 2 ripe bananas, peeled
  • 1 cup frozen pineapple chunks
  • 1 cup coconut water
  • 1 tablespoon spirulina powder
  • 1 tablespoon honey or maple syrup (adjust to taste)
  • 1 teaspoon vanilla extract
  • Zest of one lime (optional, for added freshness)
  • Popsicle molds

DIRECTIONS:

1. Prepare Ingredients:

  • Ensure the bananas are ripe as they add natural sweetness to the popsicles.
  • If you haven't already, freeze the pineapple chunks. Frozen fruits help create a creamy texture.

2.  Blend:

  • In a blender, combine the ripe bananas, frozen pineapple chunks, coconut water, spirulina powder, honey or maple syrup, vanilla extract, and lime zest.
  • Blend until smooth and well combined. Taste the mixture and adjust sweetness if needed.

3.  Pour into Molds:

  • Pour the blended mixture into popsicle molds. Leave a little space at the top for the mixture to expand as it freezes.
  • If your molds have sticks with attached lids, insert them. Otherwise, freeze for about 1 hour before adding sticks to keep them upright.

4.  Freeze:

  • Place the popsicle molds in the freezer and let them freeze for at least 4-6 hours, or until completely solid.

5.  Enjoy! 

  • Once the popsicles are fully frozen, remove them from the molds by running warm water over the outside of the mold or dipping them in a bowl of warm water.
