Pumpkin Chia Pudding

INGREDIENTS:

  • ½ cup unsweetened milk of choice 
  • 2 Tablespoons chia seeds
  • 1 Tablespoon ground flax seeds
  • 1/5 scoop Alaya Naturals Vanilla Collagen 
  • 2 Tablespoons canned pumpkin
  • 1 Tablespoon almond butter
  • 1 teaspoon maple syrup
  • ½ teaspoon pumpkin pie spice
  • ¼ teaspoon cinnamon
  • ¼ teaspoon sea salt
  • ¼ teaspoon vanilla extract
  • handful of pecans (optional)
  • pinch of coconut flakes (optional)

INSTRUCTIONS:

  1. Add milk, chia seeds and flax to a mason jar. Shake well and let sit overnight. 
  2. Combine chia and flax mixture with other ingredients in saucepan. 
  3. Stir over low heat until warm and fully mixed.  
  4. Put back in mason jar and chill again for at least 30 minutes.  
  5. Serve! Optional to top with pecans and coconut flakes for extra crunch.
