Chocolate PB Muffin in a Mug

  • 3 Tbsp whey protein (almond meal flour for gluten free)
  • 1 tsp steel cut oats
  • 1 large egg, beaten
  • 2 Tbsp raw cacao powder
  • 1 Tbsp pure honey
  • 1 Tbsp milk of choice
  • ¼ tsp baking powder
  • ½ tsp vanilla extract
  • 1 Tbsp nut butter of choice
  • 1 tsp coconut oil
  • pinch of salt

Toppings (optional):

  • 1 tsp cacao nibs
  • Fresh berries


  1. Mix all dry ingredients for the mug muffin together in a small bowl (salt, baking powder, oats, cacao powder, whey protein or almond flour).
  2. Then mix coconut oil, milk, vanilla extract, honey, and egg into the bowl and whisk well. Make sure there are no lumps.
  3. Pour into a microwave-safe mug. Press dollop of nut butter into the center of the batter and place into a high-powered microwave for 80 - 100 seconds, or until the muffin is cooked to your liking.
  4. Serve the Chocolate Mug Muffin with your toppings of choice. Enjoy!
