Carrot Cake Porridge Recipe

SERVES 1

INGREDIENTS

  • 1/4 cup steel cut oats
  • 1/4 cup vanilla coconut milk
  • 1/3 cup water
  • 2 tablespoons dried blueberries
  • 1/3 cup grated carrot
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 2 tablespoons walnuts – chopped
  • 1 teaspoon maple syrup
  • pinch of coarse sea salt

PREPARATION

Bring coconut milk, water, and salt to a boil. Add steel cut oats, vanilla, carrot, dried blueberries, nutmeg, and cinnamon. Reduce heat to low. Simmer for 20 minutes, stirring occasionally. Remove from heat and place in a bowl. Top with chopped walnuts and maple syrup.
